When I saw it was all about the pastry on the Great British Bake Off this week I was a little scared. I had promised to challenge myself with the Great Bloggers Bake Off, and I had to do Jenny Berry and Helen Hollywood proud and give pastry another go.
I opted for custard tarts because, hello, no blind baking and a mention that you could work the dough quite a lot and it would forgive you. Perfect.
I used Paul’s recipe here. Step one into the recipe though and I was fretting. The battery on my digital scales has been threatening me with a ‘LO’ message for numerous bakes now and it chose the tarts to finally give up the ghost. I had to fall back on a pair of plastic scales that are really not reliable. Not a good start. I persevered though and overall I’m pleased with the end result. I did have sinking domes so guessing I overbaked slightly but at least I got the tarts out and….drum roll…no soggy bottom! They taste great too. Hooray.
Two minor issues to report. One: Light. There was none today round here, gloomy as all hell, so rubbish piccies make me sad. And Two: storage. I just googled how to store custard tarts and it would appear they’re only good on the day of baking. Help, someone come and eat 5 custard tarts, quick. Save me from storing them in my tummy!
