Anzac Caramel Slice | BluebirdsunshineI’m just back from a fabulous week in Mallorca with my girl and the transition back from beach and buffet to rain and school runs has been tough. I’ve got a million things to do so rather than start any of them I had to prioritise a snack to keep me going. Before doing anything I sat down and watched this week’s Great British Bake Off and set about finding my bake for this week’s Great Bloggers Bake Off, hosted by the fabulous Jenny Berry and Helen Hollywood.

I had to go with something not too trying as I couldn’t face failure this week and didn’t have a lot of time to bake (read: any really) and something with maximum comfort value. Being Australian I love a slice – that’s what we call traybakes – and one in particular had caught my eye. A recipe by Donna Hay for Anzac Caramel Slice. Anzac biscuits are oaty syrupy goodness that remind me of childhood as they’re one of the first things I learnt to bake, and this recipe uses the dulce de leche I bought back from Spain. Yum.

It was easy. It is delicious. Hits the spot. Ready to face the to-do list now.

    • Yes, well spotted! Is indeed a Bonne Maman jar as I didn’t have quite enough dulce de leche as the recipe needed so I topped up with this caramel filling BM do. It’s delish. Mallorca was amazing. Can’t wait to return and explore more soon.

  2. so like a caramel flapjack then? mmmmm they sound great i ahve heard of anzacs but never yet tried one !it does look good – welcome back from your hols and thanks for finding the time to join in again x x

    • I gave most of it away within an hour of it coming out of the oven as gifts to lovely friends who helped me out with my little boy while I was away. Out of sight, out of mind πŸ™‚
