Dairy-Free Carrot Cake with Orange Frosting | GBBO #8

Carrot Cake with Orange Frosting bluebirdsunshine

This week’s Great British Bake Off saw lots of unusual bakes. The episode kicked off with loaves using non traditional flours like spelt and rye, followed by Dacquoise for the technical and showstopper dairy-free vegetable cakes. It was such a shame to see Christine leave but I think it was a fair decision really. I’ve started getting a little lump in my throat for people as they leave now, as they’ve been in my living room and inspiring me to bake for 8 weeks. It’s sad to see them leave the competition.

This week for the Great Bloggers Bake Off, hosted by Helen (The Crazy Kitchen) and Jenny (Mummy Mishaps), I decided to go for the dairy-free vegetable cake and I made a carrot cake. I used this BBC Good Food Yummy Scrummy Carrot Cake recipe. Instead of cream cheese frosting I made regular icing using fresh orange juice and sprinkled the orange zest on the top of the cake. I also had a go at making mini marzipan carrots. I used food colouring paste to dye the marzipan and a sharp knife dipped in cocoa powder to make the little creases, with coriander tops. I love marzipan so very happy I still have loads leftover.
