Super Easy Sausage Rolls | Bluebirdsunshine

So that’s it, another series of Great British Bake Off is over. Weep! I was so glad Francis won, I really didn’t expect her to pull it off but she was a deserving winner on the day. Her wedding cake looked the best by far and the petal confetti was genius.

As I was watching I was thinking about what to do for the final Great Bloggers Bake Off, hosted by the super lovely bakers Helen Hollywood and Jenny Berry.

I realised I had all the ingredients I needed to make some sausage rolls with the children so that was what we whipped up last night. Seriously easy sausage rolls. So easy that they barely need a recipe and a very-nearly 5 year old can make them.

I want to challenge myself for the final – it’s the final afterall – so I’m also making a special celebration cake but that will have to wait until tomorrow!

Super Easy Sausage Rolls
Makes 10

3 sausages
3 sprigs of thyme
3 sprigs of rosemary
1 sheet ready rolled puff pastry
1 egg, lightly beaten

Preheat oven to 200 and place a piece of baking paper on a baking tray and set aside.

Using the best quality sausage you can afford, peel off the skin and put the sausage meat into a bowl. Finely chop the herbs and stir through the mince. Cut two 10cm wide strips of puff pastry. Mould the sausage meat into two long snakes the length of the puff pastry and place one onto each piece of pastry. Using a pastry brush, run a line of egg wash down one side of each pastry strip then fold the pastry over the meat keeping it fairly tight and seal the roll by turning it so the crease runs along the bottom of the roll. Using a sharp knife cut each strip into 5 rolls and brush the tops with a little egg wash. Sprinkle with caraway seeds if you like them.

Place the rolls on the paper on the baking tray and put in the oven for 15-20 minutes, or until golden brown and cooked through.
