Semi final week of the Great British Bake Off saw the bakers take on baklava, schichttorte and entremets. Deciding what to bake wasn’t too tough. I love baklava but I’ve made it before and didn’t fancy having a tray of it to hand. It’s one sweet that I can’t eat a lot of. I know, madness. And, sorry, but the schichttorte did not look appealing. Dry pancakes stacked together. Ew. So it had to be an entremet. I actually quite fancied taking on the challenge, after making a gateaux opera last year I was keen to try my hand at another layered patisserie bake.
Last year’s Masterchef Australia challenged the contestants to make Kirsten Tibball’s Eve and I thought at the time it looked amazing. Chocolate and pistachio – win win! I changed the ingredients to the crispy base slightly (hazelnuts and speculoos or Lotus spread as well as flaked almonds) and added a chocolate ganache topping because really it needed another chocolate layer (ahem).
2 days and 725g of chocolate later, and with a little help (‘I just stirring mummy, promise’) from my girl, I had myself 2 individual chocolate pistachio pizzazz (pizzazzes? pizzazzi?) and an enormous tin as well that will probably serve 10. Entremets anyone?
Green pistachio dacquoise mixture had a hint of the Halloween about it.
Shine loved painting the dacquoise with raspberry jam.
“I’m just looking with my eyes, Mummy“. Hmm, not so sure about that.
I love whoever it is who invented chocolate cremeux.
Looking on the inside, top to bottom: chocolate ganache, chocolate cremeux, pistachio dacquoise and a crispy praline biscuit base.
